Summer Sausage Varieties

Grilling season is so close that you can almost smell the char. There’s so much opportunity for what you can grill— burgers and hot dogs are classics for a reason, but grilling opens up a whole universe of culinary adventures.  If you’re not familiar with our homemade sausage, prepare to meet your new favorite items.  

At Caputo’s, we take pride in producing the highest quality and best tasting products. In order to do this, we take a lot of steps to ensure that everything is being done properly and with the best ingredients. One example of this is how we make our sausage.

Our sausage is made in-house daily. The process starts with our old-world tradition of using hand-trimmed lean pork. We mix the pork with our private blend of spices and seasonings, developed specifically for our sausage. 

Our recipes and sausage making process have been tested, tweaked, and perfected throughout the years. We believe in transparency, so you can trust that what you’re eating is authentic! Take a look at some behind the scenes of our sausage room:

This grilling season, we’re excited to introduce you to some brand new, limited time only items! We have 2 new sausages that you’re going to want to check out

Rapini Sausage 

Rapini lovers rejoice! We made a sausage that makes an incredible sausage because it has the meat, veggies, and flavor all in one item. For this sausage, we take our mild sausage as a base and add some flair. We add some extra spices, and herbs as well as the main event- fresh rapini that has been sautéed in olive oil and seasoned with a bit of red pepper. 

Margherita Sausage 

For this one, think a margherita pizza in sausage form. We start with our mild sausage as a base and then add the extras. This sausage has fresh basil, tomatoes, mozzarella, and parmesan. The result is a fresh taste of summer in one sausage. 

We also have a whole line of new, homemade brawtwursts you’ll want to check out too. Jalapeño cheddar-with real chunks of jalapeño-, cheddar, and more! 

These new varieties are available this summer only, so make sure you get in and try it out before it’s too late!

Get ready to embrace the best flavors and feels of summertime! Join us on June 7th at our Carol Stream location for our second La Bella Romana Signature Wine Tasting and Chef Showcase!

Grab your friends, make it a date night, or celebrate an early Father’s Day and indulge in a 4 course plated meal perfectly paired with a unique wine chosen to enhance the flavors and aromas of the dish crafted by our very own Chef Douglas Yeomans!

Here’s what to expect:

You will be greeted by our team with a welcome wine and encouraged to enjoy a delicious, summer appetizer that will bring the freshest flavors of Italy right to you. Then you will be served a 4 course meal and you will be transported to a world of exquisite flavors and aromas.

Our very own executive chef, Chef Douglas Yeomans, who has been an executive chef for over 30 years, will be preparing a meal designed to satisfy every taste bud! Each course will be paired with wines that have been expertly chosen to compliment the dish.

You will hear from our chef about the meal you will enjoy and a wine expert to explain the  different wines — the taste, the wine making process, discover the depths of the wines, and why they pair well!

You will leave delighted in a delicious meal, filled with wine (and some wine knowledge), and get a step by step recipe for one of the incredible dishes so that you can recreate it at home! In addition we will have a goodie bag for each attendee and we will have some fun raffles! Plus attendees will enjoy exclusive discounts available that night only on the wines you just tasted.

Salad

Smoked Strawberry and Warm Goat Cheese Strudel Salad over Peppery Arugula with Balsamic Onion Marmalade, Cherry Wood Smoked Strawberry, Asian Pear and Candied Spiced Pecan finished with a Strawberry White Balsamic Vinaigrette and Balsamic Reduction

Soup

Chef’s Warm Potato Fennel Vichyssoise (soup) garnished with a Warm Herbed Boursin Stuffed Gougère (a savory pastry) finished with Crème Fraiche, Garlic Chive Oil and a dusting of Fennel Pollen  

Main 

Porchetta Style Slow Roasted Pork Belly over Creamy Caramelized Onion, Herbed Asiago Polenta with Charred Asparagus, Smoked Tomato Coulis and Black Pepper Lemon Parsley Oil

Dessert 

Bourbon Barrel Red Wine Poached Pear Pavlova (a meringue based dessert) over Brandied Burnt Cinnamon Crème Anglaise, Warm Spiced Mini Meringues, Fresh Berry and Double Vanilla Chantilly Cream
