12 month Manchego
From Spain, this is one of the World’s most well known cheeses by name. This 100% sheep’s milk cheese is salty and slightly creamy, but with a slightly sweet finish. You might notice small, crunchy protein crystals (tyrosine) throughout the paste, which are a sign of extended aging. Pairs well with Prosciutto, quince paste and nuts.
Barbers 1833 Cheddar
This perfectly aged 20 month cheddar comes from the actual Cheddar region in England. It is creamy and complex thanks to a little bit of tang amongst the sweet notes. It has the savory depth of a full bodied cheddar while still boasting sweet undertones. It features naturally occurring calcium lactate crystals, which provide a pleasing and distinctive “crunch” that is highly sought after in aged cheddars.
Fromage Affinois
This Double cream Brie from France is so Lucious that you will think it is a triple cream! It uses a specific process that involves filtering the milk, a concentrated aging process, and a unique texture. It is known for its exceptionally mild, sweet, and buttery flavor, but has a cleaner finish than other bries.
